I listen to primarily folk, acoustic, and live music and wanted some recommendations or opinions on a new pair of cans for around $350. I was debating between the Senn HD600 or the Grado SR80e. Any compared this two or compared a Senn and Grado? If there's another option on a pair of cans let me know.

I can say that my personal experience with the HD600's has been very very good. They are just a little power hungry, so make sure that you have a good amp for them.
 
Unfortunately I can't attest to the quality of the other set of headphones. But if you decide to go with the Sennheisers, I'm sure you'll be quite happy with your purchase.

Yes they are a very good all around head phone. Bass isn't thumping, but it is more than adequate. Any more bass would ruin the listening experience, since your goal is to hear all the finer points of the track.
 
I love listening to acoustic, jazz and classical with them. I can't say much about folk, but I think that genre probably shares many characteristics with your general acoustic properties. The headphone has really good clarity. If you're willing to spend a bit of money on a good DAC/amp combo, it will also improve your experience.

Beyerdynamic DT880 might work too.
If you post a link or two with your preferred recordings I can probably try them with my HD650/DT880 and share a comment.
