Why do some recordings seem to wander around?

I'll be listening to a recording of a solo violin and it really seems to wander about. It seems like it should be a little more static.  Do they sort of do some weird panning to the recording?  To be honest I haven't heard a violin in a concert hall so I'm not sure if I have the best picture of the actual sound but it seems off.
 
Also wondering if there are any professional binaural violin recordings available online.

this isn't really particularly helpful without knowing what recording you're talking about.  Could be all sorts of things, could be deliberate panning, could be differing projection by the artist, could be the acoustics of the room, could be just about anything.

In case you have a soloist moving around infront of an otherwise close up mic, you will hear the violin sound moving in position relative to the mic. E.g. Janine Jansen Prokofiev concerto on Decca. I saw her live and she's moving a lot - the recording reflects that. It sounds a little weird at first but it is part of the dynamic performance. You can't strangle the performer to a pole to fix the distance to the mircophone
