So how much better are the M50s vs a gaming headset?

The HD 558s are a good choice. Also there is a mod where you can remove the black foam from behind the driver and make them sound a lot like the more expensive HD 598 and the mod is reversible too if you prefer it to sound like stock.
 
As long as you understand that the HD 558 is an open back so will leak sound and let sound in and are ok with that I think that would be a good purchase for gaming.

If you want a true experience, large soundstage, good positional accuracy and a headset that really seems like it's an atmosphere then go for the MA900 by Sony. They are cheap, comfortable with great Bass, excellent detailed Mids and nice Treble. You realy can't beat them at any price range.
 
I've used the K701/702 The are detailed too but the Soundstage is not very wide and defiantly isn't deep but they are accurate.
 
The M50 are horrible for gaming, congested and small soundstage ruined it for this purpose. The HD558 are ok but nothing like te MA900.
