I need solder bunch of Toggle switches to my audio cable to connect a simple hardware mixer. The problem is I need mixer with only certain headphones. I'm not very good with hardware, what do I need to watch out to not loose sound quality? any random switches are ok? do I need expensive or gold plated ones?

You shouldn't need expensive - just reasonable quality. Most important are good solder connections.
