question: the only thing that can swivel is the left side. even i loosen the screw it doesnt swivel the right side.. is this normal?

Yep they are designed to only swivel on one side.

That's odd. . . is it so you can press just one cup against your ear or something?

It's for DJs so they can listen to the crowd/speakers as well as their headphones. It allows you to take one ear off whilst keeping one ear still covered/listening.
