Well I've got pretty limited experience with headphones but at this moment in time I would chose the HD650, the RS1 and…. Well I'll follow the trend of leaving the last space blank for an as-yet-unheard set of phones

AKG K701 - for soundstage
Beyer DT770 - for Bass Oomph
Senn IE8 - portable use

Pioneer Monitor 10 in new and original condition.
Sony MDR R10, probably bass heavy.
Sennheiser HD 800 for overall balance.

Sennheiser HD 800 (closest to perfection so far – imaging, soundstage, accuracy, neutrality)
One of my Electrostats (for its relaxing liquidity and its impressive soundstage)
Etymotic ER-4P (modified and perfectly equalized through my iAudio 7 still the most impulsive IEM in my book)

That's what I have now. I'm also interested in the T1; there's a chance for it to make it to my list.

1) Senn HD-800 for overall excellence

2) Beyer Vintage DT-48 for its' intimate, somewhat dark, midrange-centric, unabashedly headphone-ish sound

3) AKG K-1000 for its' speed, resolution and general brilliance on music it "likes"

I have heard no univeral IEM that's good enough, yet.

Contenders not yet evalusted; Beyer T-1, Beyer DT-48 Nagra era, various Stax, Sony Qualia, Sony CD-3000, Final Audio Design FI-DC1601SS

Phone I lust for most (but disallowed under OP rules): Sony R-10
