I've searched hi and lo for an answer to this but please forgive the dumb question.

I have my AMB M3 wired up as per the instructions in their site for an external psu. RCA jacks and volume pot are connected to the chassis while DC input jack is isolated. Now on my STEPS PSU at the moment I have an IEC inlet module with no on/off switch. I wired a metal toggle switch that is connected to the case in order to turn the psu on and off. Will this being connected to the case have any affect on the grounding scheme?

No.

By the way, what exactly is the metal toggle switch switching? Is it switching the AC line, or is it switching the power supply's DC output?

If the former, I'd recommend using a plastic handled switch instead.
