Any way to join tracks in EAC

Rip it as an image + .cue. The button you are looking for is on the left side of the window that says ".img". Load the .cue into foobar. It will show all the files (you do not want that), but then use the convert function. Choose to "merge all tracks into one output file". You will get one large .wav instead of all the individual tracks.

Is there any way to do it without foobar?, like just in EAC?

Going from memory, but I thought there was a way that you could select a range of tracks (say, 1-5 from DSOTM) and then click Action -> Copy Range -> something?

Well, this is a little late for this thread, but others like me still want to merge or join separate tracks into one track for players that doesn't play gapless. In my version of EAC (Exact Audio Copy) V1.0 beta 1 (of November 15th 2010) this is possible. I rip into FLAC, but I expect it to work with all types of files.
 
It is done like this after loading the cd (and getting tags): 
 
Select/highlight the tracks you want to merge into one
> Action > Copy Range > Compressed (or simply use Shift + F7)
> press OK after checking that the tracks are the correct ones.
> name the output file and select target folder > Save
