The 2.5 mm plug has a TRRS configuration meaning that the sleeve is also used for signal transmission and which the other end is always made of a cheaper material than the TRR. Terrible design to begin with for 'balanced' signals.

From my limited experience I think high impedance drivers improve the dynamics, background detail and separation as they are driven harder so there is more headroom. But I don't hear much improvements from like 120ohm to 600ohm.
