If the source is highest quality mp3s (alt insane) on an ipod connected to a decent amp (currently a META42 but will be upgraded when i'm free) what do you guys think is the threshold for headphones before you can't get any better due to the source (or do you guys think this is not possible)?

I don't think there is a threshold because even headphones on the same tier will have a different sound...it never ends!

While I don't feel too qualified to answer this, I see that you already have some Ety 4P's, and you can't go wrong with those. I'm not sure you would need to go much higher, at least if you're happy with the in-ear solution.

Sorry I can't be of more help, I don't really know mp3s that well..

I often use my Nomad Zen with the Sennheiser HE 60/HEV 70. The HE 60 does sound better with the Stax 007t amp, though. Even with the Zen. I'd use a smiley, but I'm not kidding.
