I currently own Sennheiser  HD598s, HD650s, HD800s, AKG K712s and Q701s, Philips X2s, Beyer DT880s and HiFiman HE400Ss.

I would like to add something different / "better". Cost < or = $3000.

Any suggestions?

Get a motorbike instead; you've got the roads for 'em.

Had several in my younger years, as well as sports cars.  Getting to old for that kind of stuff.

For planars, modded HE-6, HE-X, HE-1000, or maybe an Audeze for dat bass?

Dynamics, dunno as you already have the resolution king but maybe a TH-900/600?

Stats are an obvious choice but amps are a requirement here...don't know about the Woo WEE as an option?

What kind of Sound signature are you looking for?

Just something with a different sound. I'm leaning towards the Nighthawk and the HE-1000s.

Since you're in SoCal, I would just go to as many meets as you can and audition cans for yourself.  Nothing beats hearing headphones first hand.  I've actually talked myself out of purchases because the differences weren't as apparent as others would have you believe.
