Cowboy Junkies - Trinity Session
Pink FLoyd - Pulse
SRV - pretty much any of his live albums
Eric Clapton - Just one Night
Dave Weckl Band - Live and Plugged In
Nirvana - Unplugged
AIC - Unplugged
Nils Lofgren - Acoustic Live
Pearl Jam - Live at the Gorge
Opeth - Roundhouse Tapes

None of these are strictly rock, but exceptional live recordings
