You're probably better off with a USB audio interface. Take a look at something like Behringer UMC202HD and friends, Scarletrite, Motul, etc.

How do I connect a stereo input (2x RCA) into the UMC202HD?

Do I need some kind of RCA (2x) -> XLR (stereo) cable?
Hi, not sure what kind of input you want to connect.

Normally a USB audio interface is connected by USB to the computer.

Then there are n number of audio inputs either line level or instrument level. These are combo jacks, you can connect an XLR microphone or individual mono channels via 1/4 inch mono plugs.

The the output is often 2 pole 1/4 inch jack, just buy two 1/4 inch to RCA cables, both mono.
