Some current findings from my adventures:
 
Pity this isn't called the MK3/III  - since the second generation AK100 is listed as the AK100II just about everywhere...
 
User Manual
The manual for the MQS server is on the actual AK100_II internal memory - look there to find the files - they're not clearly locatable on the AK website yet.
 
PlayLists
Uses m3u but not m3u8 files.
Format is simple: (highlighted portion is tot he root of each storage location)
/storage/emulated/0/Music/Chesky Sample/10.Touched by Tango_Five Tango Sensations - Anxiety.dff
/storage/sdcard2/Coldplay/Ghost Stories/08 A Sky Full Of Stars.m4a
 
Bluetooth
8/1/2014 - Does not seem to currently support "notifying" you when you're listening that your iPhone has a call coming in, a feature I heard about in the 240 and was wanting.
 
File transfer
You have to use Android File Transfer from here to get files to and from this device in OSX. I tried using SyncMate for the Mac in "mount as disk" mode but never managed to get it to copy my 100G of data - I returned the product.
 
MQS Server
The installer for the MQS server is on the actual AK100_II internal memory - look there to find the files - they're not clearly locatable on the AK website yet.
 
DAC Mode
BitPerfect on a Mac seems to work just fine with the AK200_II 
 
Big issue: Using a /Music folder or directory
So it turns out if you save all your music into the internal memory or an SD card in the AK100II, and you put it into a folder called Music, a bug in the AK will cause the device to start removing your music from your playlists at an alarming rate. It will essentially try and index you music, and remove invalid tracks from the playlists. Unfortunately the music stored in /Music/ folder seems to be an issue and so over time (3 days, 8000 tracks for me) your playlists will become empty.
