I currently have my Xbox 360 and PS3 Hooked up to my Z-5500 through one of these SPDIF splitters and 6 foot optical cables coming from the Systems to the Splitter.

AM I getting any signal or sound quality loss?

Well you won't be getting any data loss, but you are increasing the potential for jitter.
