Perhaps you just need a good batch, but they are my favorite part of a brisket. A burnt-ends sandwich has my mouth watering right now. I also LOOOVE pork burnt ends, which are little nuggets of barbequed pork belly deliciousness.

I take it you don't use ANY software then?

We don't use that one. There is some software (beyond a PID loop) as you have CT and PT (don't ask me what those stand for, I am a dumb mechanical and just see those on the tech specs/spare parts list) on the transformer in addition to what ever sensors are needed to step down from ~13.4kV to ~300-~600V (yes, 13400 V to 300V in 3 phase AC) plus the on-load tap changer (13 or more taps), the various pressure sensors on the ram hydraulic cylinders, proportional hydraulic valves, and linear position sensors (often the string type) for each of the 3 electrode arms. For power use, call it ~200 MVA (or MW - I know there is a difference, I am not sure if they are going off apparent or real power per tap ton) so just a small amount of electricity. What is "fun" is when the insulation fails on the electrode arm and it grounds to the column, with a 72 MVA rated transformer the arc (even though there are sensors to stop it) was 2 seconds or so, and blindingly bright (and very loud).

Ever heard of popcorn shrimp? Texas Gourmet popcorn is like that but little nuggets of smoked tender beef brisket instead. If it's a good cut of meat and truly smoked well, sauce is not needed. 😏

The "rave"(ing) reviews here are for Bonefish Grill shrimp which I find funny as it is a ~200 location chain, I would have thought one of the local joints would be better - I know I found a spot with crab stuffed shrimp which was good over the weekend.

Modi 3+ (still $99 USD) has Unison. for sure, I looked inside my newly acquired b-stock unit, and there it was...

Note that board pics on Schiit.com still show the older non-plus-version Modi 3 (with CMedia USB interface chip).

maybe Modi Multibit+ (with Unison) will soon follow...maybe this wednesday when Mike is hosting.
