I’ve had no trouble getting a consistent brew with my chemex. Especially since I learned to stir the grounds in the water. I used to just let it drip away and then add more water till the kettle was empty.
This video helped a lot. Just that little extra step of stirring while brewing brought more of the flavors out. I haven’t had a bad cup since.
