I rip my CD's to FLAC -5 with EAC, and I use foobar2000 to convert them to LAME mp3. There is only the option to choose VBR rate and either --vbr-new or --vbr-old

I want to toss in some extra LAME options, is there any way to do so?

Yes, use the custom encoder from the drop down list, instead of MP3(LAME)

Sweet...how did I miss that custom option?! What skin are you using? is that XP or Vista?
