I'm a big fan of Tate and Gardiner in the Symphonies - different interpretations, but both have very good recorded sound and very good performances.

Also try the Requiem performed by Harnoncourt, really great sound and performance there to. For the Piano Concerto's, the recent recordings by Brendel with Mackerras and the recordings by Goode and the Orpheus Chamber Orchestra are outstanding in performance and sound.

You can't really order these online, but there are JVC XRCD remaster releases of couple Mozart titles, and they're very audiophile quality, especially when wired through tube CD players and $20k power cables which they just happened to have at the demo room. You can usually find those kinds of stuff at Chinese... "import" CD stores.

René Jacobs just put out a new disc of Mozart symphonies on Harmonia Mundi.

This site has plenty of XRCD titles, which are - generally - of splendid demonstration quality. Mehta's Planets, for example, while weirdly recorded, will gladly show you of what your system is made.

Don't limit yourself, though. If you limit yourself to audiophile-grade recordings, you'll miss out on some of the great ones. For one random example, Wilhelm Backhaus playing Mozart's K. 331 in Salzburg at the 1966 Festspiele isn't hi-fi, but it is wonderful.
