Just stumbled across this at Audioasylum.com:
"Just as an FYI, there is a little program here:

That allows you to use iTunes in conjunction with EAC--EAC calls iTunes as a command line encoder and passes all the track data. I use it to generate Apple Lossless files when ripping with EAC. They show up in the library and the tags are straight from EAC."
