Is there any reason that in analog PID circuits the summing opamp is usually configured as inverting, and then another inverting opamp is used to revert the output? What's wrong with connecting multiple inputs to the + of an opamp configured as a follower?

The minus input is always at virtual ground. So all the voltages are summed
as currents, and each of the inputs does not interact with each other.
