I’m building a PPA v1 in metal-ended aluminium Hammond case.
Using what I believe to be a non-isolated DC jack, with isolated input jacks on the same end panel, will this cause a problem that the DC jack is not isolated from the metal case.

This is the type of DC jack.

If your output jack and potentiometer is also isolated you will be fine. By not connecting the case to input ground you might lose some of its shielding effects though. The best thing to do is just use an isolated power jack.

That jack is indeed not isolated. Tying the case to V- and letting everything else float can work, but it's not ideal. Be sure not to tie the pot's chassis to PG as shown in the guide!

I had the same problem with my Pimeta. To work around it without having to make another order to Mouser, I bought a rubber grommet from radioshack and put it around the jack. The catch was that I had to file out the hole by hand to get it to fit just right. It was a tight fit. It's better to order the correct part in the first place.

I've done as Synbios to isolate the power jack on my PIMETA and it has been fine for a over a month now. I just used electrical tape around the jack and hand-cut a plastic washer (from a disposable plastic food containiner) for the inside of the case. I suppose I should rig it up properly someday.
