What does the gain do? I noticed my amp don't have it and some others do. What are the benefits?

The amount of gain an amp has quantifies how much it amplifies the signal. If an amplifier has "no gain" it's not amplifying.
I'm not sure what you mean when you say your amp doesn't have gain. Perhaps you mean it doesn't have adjustable gain?
