New High end setup - help

Hi everybody, I'm writing from Italy, i'm studying electronical engineering and i love audio and everything related.
 
The next month I planned a radical change in my audio gear (which sadly only consist in a crappy sennheiser and a xonar essence audio card). 
What i want is the definitive setup, so i checked out a lot of reviews and i find out two headphones, the HD800 and the grado GS1000e. What i'm searching is an headphone that is the clearest and the most cristalline possible, with a very wide soundstage, well balanced between all frequencies (the type of headphone that if you close your eyes, it makes you feeling actually in the studio, in front of the singer/band). I prefer listening to instrumental music (like Hans Zimmer) and rock (like pink floyd and U2).
 
What do u think it's the best?
 
Also, I have to buy a DAC (possibly a dac/ampli combo), again, after a few searches, i found that in the <1000$ range, the best dacs that you can find are the teac UD-503 and the Woo Audio WA7 fireflies... which of the two do you prefer and why? There's something better for less than 1000$?

Have not heard the GS1000E but did love the GS 1000's. It is hard to find soundstage better than the 800's. I only heard the 1000's twice and don't recall the soundstage sorry but they are just have the air to them that is just so sweet. I think the 800's need to be modded to get rid of the shrillness for me then they are very good indeed in seperation and detail . They would need a good amp to get the most out of them and most say they are pretty finicky about which one.

Thanks a lot for your opinion... What do you think about those two dac mentioned above? The woo audio wa7, that seems a good complement to hd800 (at least this is what i've read) or the teac ud 503, another great dac with plenty of features, including balanced drive, many inputs and dsd support?
