Since everyone seems to think that this is the only real way to set your azimuth, I got a voltmeter. However, I've now noticed that all of the instructions online are for speakers, which I don't have in my system. How do you guys use these for setting up turntables on headphone systems?

I think there is more to it than just a voltmeter. I think you need a high-pass filter, a source of the appropriate tone (e.g. The Cardas Sweep Record) and maybe some other stuff. Do a search on audioasylum, I think there was a thread there last year on this.
