I hope you guys can help me I am searching for a audiophile USB/Firewire DAC with a XLR output for professional use. Apps using it are adobe premiere and adobe encore plus of course some bitperfect player for playing some music. I can also DIY replace the cinch plugs for XLR if it is possible by the hardware design. It would also be nice if there was a audio volume adjusting function. Price range is max $400,-.

Cambridge Audio DacMagic has USB in and XLR out but it's a consumer device.

Think you might prefer something like the Focusrite Saffire (firewire) or E-Mu 0404 USB, but they use TRS output jacks (is it such a problem to use adapters?)
