MBox 2 Interface powerful enough for DT 880 250 ohm?

The specs are not too detailed but the 6 mW maximum power into 50 Ω does not look good by itself. Maybe it has rather high output impedance, and then with a 250 Ω headphone the power output could be similar, but 6 mW is not much anyway. In any case, rather than guessing, you should probably just try it and decide yourself whether there is enough power. If not, a FiiO E11 (~$65) or a good cMoy for a similar price would fix the problem.

Well right now I have a FiiO E10 but my goal is to use my reference studio speakers and headphones at the same time and they are on seperate drivers, I have no idea how to enable both of them at the same time on Windows 7. With the FiiO e11 would I just plug my headphones into the amp and have the amp plugged into my mbox2 headphone input?

Yes. But if you have the FiiO E10 now, you can also test if it sounds better than the headphone output of the mbox2 alone.
