I'm interested in learning which beers pair best with different foods. So far I've heard the following:

Shellfish = cream stout
Milder seafood = Trappist ales
German sausage = malty german lager or bock, or a dark ale
Spicy, lighter foods = pilsners or pale ale
Pasta = "dry" beers
Desserts = cherry or chocolate beers

Which of the above do you agree/disagree with? What are your recommendations?

Trappist ales with seafood ?

Mate them with Trappist cheese.
Pasta are to be drunk with wine, Pizza with pils.
French fries and steak with pils.
White beers like the hoegaarden are nice with seafood.
Chocolate and baltic porters are going well together.

All that in my opinion.

My recommendations:

Shellfish = alcohol
Milder seafood = alcohol
German sausage = alcohol
Spicy, lighter foods = alcohol
Pasta = alcohol
Desserts = alcohol

Everything tastes good when your p*ssed

certain foods like German sausage (for example) can only be deemed remotely edible after a few beers and a true delight when totally P*ssed

Pink tip: do not try the aforementioned foodstuffs unless you're totaly wiped.

it's not a matter of matching beers to food imo
it's seasonal for me.

i love red and ipa in the summer, porters and stouts in the winter.

fall and spring i mix it up with amber ales, darker ones in the fall, lighter ones in the spring.

personally, heavy food = light beer. light food = heavy beer. i love to have pizza with a good lager or pilsner. spaghetti and ipa is so good!

but, i can drink black butte porter all day every day
