Here's a good explanation of the contour switch: Loudness Contour
I see them all the time on vintage receivers, but not so much on modern stuff or headphone amps. Wouldn't it make sense to have something like this on a headphone amp though? or are they all just built in by default now?
I currently do most of my listening through a vintage receiver, and I do use the contour switch when listening at low volumes. It fills out the sound better than fiddling with the tone controls. At higher volumes, I turn it off as it starts to get a bit too "boomy".
