And those two sheets and compare - especially look at:
 - FREQUENCY RESPONSE (no peak around 3.5khz with 600ohm version suggesting a little bit smoother sound in that department = highs)
 - 30HZ SQUARE WAVE (significantly more square-like look of 600ohm version suggesting a littel bit tighter bass)
 - 300HZ SQUARE WAVE (reduced ringing with 600ohm version suggesting a bit smoother and precise sound overall, could image a bit better)
 - %THD+noise (significantly lower with no significant inconsistencies with 600ohm suggesting cleaner sound overall)
 - IMPULSE RESPONSE (let's say they are the same so both will be equally "fast")

Those differences will be definitely small but expect a bit cleaner and tighter bass response along with cleaner and smoother highs... A LITTLE BIT, not much!

Depends on how much you want to spend... But 600ohm version is better, definitely. Drivers seem to be better controlled, simply.

Thanks heaps for that! To be honest the difference doesn't seem huge bar that 3khz spike in the 250s and a little more ringing but I know if I buy the 250s and like them I'm always gonna wonder what the 600s would've been like, think I'll save and get a set too, to be honest I don't think I'm ready to jump up past the high-mid-tier because of diminishing returns and I think its hard to beat the price to quality ratio of cans like the hd600's, k702s and hopefully the 880's

All the differences are rather subtle but they SHOULD be possible to hear... It's not an academical difference, it's definitely something I expect to do a appreciable difference!

If short on money, 250ohm will definitely do... But if you can spend a bit more, definitely go for 600ohm version!

I'd say it isn't worth it to spend significantly more for the 600 ohm. I wouldn't spend more than 30$ extra at max

Okay so I've ordered some Beyer dt880 600 ohms and the K702 Annie pads, I'll report back when they get here with my findings (probably gonna be more than a week I'm in Aus)

Ended up getting some for the same price as the 250 ohm version so I'm happy :)

That's true! From everything I've heard it warms them up a bit through the bass and midrange and makes them a better all-round can.

Okay so I just got the DT880 600's,
at first listen I was like "hrmmm, meh" as they sounded very similar to my other cans,
as I listen a bit more the only gripe is the mids feel a tiny bit subdued and not as silky as I'm used to (I've been listening almost exclusively to some AKG K240 studios for the past week, they're VERY VERY impressive for the money) but the more I listen the more I enjoy, I feel like these definitely fill out the full spectrum.

I'll probably compare them to my other cans properly soon, no idea what's going on with my K702 pads but hopefully they show up

They should have a bit more pronounced bass too.

Yeah they have more bass and a little bit more air up top which I like

I was in the exact same boat as you, and I went to the 880s as well. Give them time, imo you will be happy with your purchase.
