the builder is using polyester caps for signal coupling, isn't it a sure way to degrade sound quality ? The pcb interested me but it doesn't seem to allow similar polypropylene caps (1uf) to fit in there

we're in trouble then, most of the interesting preamps designs use such capacitors. The bride of zen from Passlabs too for example.

Are those caps such a problem when using quality polypropylene caps as Audyn ?

Presuming you will check for dc offset before you hook it up, install jumpers instead of caps, in the signal path. You can also use better caps in the circuit, if you want safety. You could also use opamp sockets, and buy a handful of opamps and swap them out to find the ones with the lowest offset.

Just a couple of ideas.
