Clueless about electricity.
If I need a 15v power supply does the amperage matter?

Match the recommended amperage when you can, going over is fine. Just don't go overboard and pick a 5A PS when you only need 300mA.

Also check to see if you need a linear PSU or if you can get away with a switched mode PSU (assuming you are after a 15DC line) - some DAC's will not play nice with a switched mode PSU. If in doubt, ask the manufacturer of your device.
