It'd probably be easier to just buy closed headphones to start with.

Well, if what you wanted where closed headphones, yes. But if you like/want to use open headphones, and there are just some occasions when sound leakage becomes a problem (ie. roommate goes to bed), then it might be useful to cover the grill and make the cans silent. That way you get the best of both worlds: the cans you like and the chance to use them at all times/situations.
