I would like to know how's the best way to approach doing this. And how you got around the mini 3 pin XLR problem. Any advice would be great!

Did you not make the cable for your balanced Senn's John?

mini-XLR on both ends. should be easy to rewire.
tough part would be inside the headband as it only runs 3 wires (common ground). so you'd need to open that up and replace the internal wires as well
