Got the SR-009 and I think it´s easily the best headphone I own or have ever heard, but it´s not perfect.

I own:
Stax SR-009
Senn HD 600
Senn HD 650
Senn HD 700
Senn HD 800
Senn RS 220
(What can I say, I´m a bit of a Sennheiser fan).
Beyerdynamic T1
Fostex TH-900
Audeze LCD-2

So after all that I´m still hungry for new headphones, what´s wrong with me?

Recommendations?

Try the Sony MDR-R10.  If you source and amp are really good, they are nearly as good as the SR009.  Their presentation is more romantic and warmth though.  Or hunt for the Orpheus system.

Yeah, I would second that. I have 'only' the SR007s but the sound I am getting is incredible.

NO FATIGUE, GREAT DETAIL, BEAUTIFUL TUBE MIDRANGE, TREBLE INTO THE HEAVENS.

My system is tubed Audio Note DAC 3.1 which is None Oversampling, so that might be the reason I am
so content. It is the most organic and smooth sounding digital I have heard.

And I use a Mac Mini with M2Tech full stack as the SPDIF convertor and external clock, which has a big impact and
easily beats 10K+ CDPs. Basically it gets right to the source, no extra sampling or flab, pure music.

I would recommend you look at your source components. Try a None Oversampling DAC preferably with a good
tubed based output. Look at a good tube based headphone amp like the Blue Hawaii or LL. And ensure all your cables
are good quality. If using a DAC with a PC, it needs Asyncronious USB, and use good software like Audirvana+.

Actually, if you sold off some of your headphones, but kept the 009s, and got an Audio Note DAC and the BH,
you would have a killer system!

Why, you are addicted to change and comparison, of course!  Easy to happen.  Looking forward and lusting for something can be more exciting than actually attaining it!

Recommendations: Buy software until you have a big stack of it in front of you that you have not listened to yet, then get lost in listening every time you are tempted to do searches on new hardware.  Of course, that assumes that you want to change the addictive "acquisition cycle"
