Jeff Beck (one classic has been mastered to SACD)
Joe Satriani (last two have been mastered to SACD, and the early ones aren't bad either)
Return to Forever (features Al Di) -- there's a DSD remaster both on SACD and redbook CD
Ozric Tentacles -- just fun, good playing, not sure about fidelity, though
Joe Satriani - Surfing With The Alien, The Extremist, Flying In A Blue Dream...IMO his early stuff is brilliant, last two or three haven't been that fantastic.
Billy Cobham - Spectrum. just great fusion, with loads of fire-y guitarwork.
if you don't mind acoustic guitar: Bozzio Levin Stevens - Situation Dangerous.
and if you don't mind vocals, King Crimson - Discipline is a blast!
Try a band called Tribal Tech which features Scott Henderson on guitar. I'd recommend either Face First or Reality Check as good first cds. If you like them I highly recommend the Vital Tech Tones, a jazz/rock fusion side project with Henderson, Victor Wooten of the Flecktones (he's one badass bass player) and Steve Smith on drums. They have two cds VTT and VTT2.
Another suggestion is the band Jing Chi featuring Robben Ford on guitar. They have two cds, Jing Chi and Live at Yoshis.
Proved that despite its huge size the CD3000 can be shoved down one's throat.
