So I understand that my iFi iCAN PRO amp would be good enough for the Utopia,
and that I only need to purchase the Schiit Yggdrasil.

The best cable I own for connecting an amp to a DAC is a Oehlbach XXL-2 8.5 mm Cool Silver,
would you also have an idea whether it would be good enough
for connecting the iFi iCAN PRO to the Yggdrasil,
and not creating a bottleneck between the two in view of the performance of the Utopia?

That looks like a pretty high-quality cable. You shouldn't have anything to worry about.

Schiit Yggy is an incredible DAC at a great price for all you get.  The only caveat would be that it will not play DSD.

When you ask for a recommendation here at Head-Fi you will usually get buried in a lot of good suggestions, LOL.
 
If you can get an in-store demo of some of your candidates with your music and your phones that's great. If you can get a few days in-home demo or go for a product line with 15 to 30 day in home demo with a fair return policy, that's even better. That's how I did it, exhausted the in store possibilities I could find, then went to the net after digesting a lot of other peoples input here and elsewhere.
 
If you could listen with my ears...well, you can't. 
 
Trust your own ears, their smarter than you think and better than anybody else's, cause their yours.

Nothing you own will cause any bottleneck or issues. You may find yourself choosing other components after you realize what the Utopia is capable of but not because any of your current gear having any significant down sides. I'd suggest you get the Utopia when it becomes available in Europe and listen to your system as it is. From there decide if any changes need to be made. Good luck and let us know how you like the Utopias later this year when you get them.

Just waiting here for the near-future Utopia owners to try a Moon Black Dragon cable  or, further out, a Toxic Black Widow cable, which I would lean to if I were getting these based on reports so far.
I've had good listening experiences with both of these cables.

Quick question on the cables that come with these (Utopia and Elear) - can they be reterminated as balanced? That is, do the cables inherently have a balanced design or would they need an altogether new aftermarket cable to use them in a balanced setup?

Looking at the (loooooong) cable that's attached my Elear, I would say they can not be re-terminated balanced; I only see two wires. I've been looking for a shorter, preferably balanced, cable options for the last few days.
