Jackson Browne Solo Acoustic Vol. 1 is my favorite by far, but I also really enjoy Lucinda Williams Live @ the Fillmore.

Tons of great Jazz ones too. Dave Brubeck did a lot of live albums. The Last Set at Newport is amazing.

Crap, almost forgot Neil Young Unplugged...

There are too many!

Eric Clapton Unplugged

Both superb perfomances and excellent recording quality. Alison's vocals on Oh Atlanta send shivers down my spine

Three that have stood the test of time for me are:

The Who: Live at Leeds

Little Feat: Waiting for Columbus (must be the LP version, though, that includes "Don't Bogart That Joint")

Bruce Springsteen and the E Street Band: Live, 1975 - '85

The 1st two have been previously mentioned here, but not having Bruce in a live thread is sacrilege that I must correct.

i also enjoy james taylor live

i'd mention eric clapton unplugged and alison krauss and union station live, but those have been listed a bunch of times already.
