What is your favorite hotel, and why?
I'm not talking about the most expensive, or lavish, but more of "best fit" for your lifestyle, so to speak.
I have two kids and it seems like we take a mini-vacation every other month. My first preference is Doubletree Suites. The kids have the fold out couch, and my wife and I have some peace and privacy in the bedroom. Embassy is good also. You don't always get what you expect. Embassy near LAX is great, the one near the financial district in New York is old. Doubletree in Atlanta is a lot better than the one in Naples, FL.
These two chains seem to run about the same amount as a typical room at a Marriot, or similar.

Marriots are great...I also have had good experiences with Holiday Inn

From my travels I like Hilton and Marriott. A lot depends on how well maintained they are and the staff. With kids the Holiday Inn's that have indoor pools and recreation areas are good. I always make sure that any hotel is not in the middle of renovations before I go. You may also like Marriott or Hilton suites. Kitchen, separate sleeping area, free breakfast, evening appetizers. At many the evening free stuff is enough for dinner.

I prefer the Mom and Pop operations. Lately when traveling for pleasure I stay in B&B and I have not been disapointed yet, for example in Key West and in Charleston. Note: Both of those places are great, if you have a chance to go do it, you will love it.

I've been staying at Comfort Inns for the last several years. While they vary by location and operator, all seem to have good locations, good racks, room designs for work and including a comfortable chair for reading and listening, decent free breakfast and fair prices. It's a Choice Hotel and there's a fairly good "frequent stayer" program you might want to check out.

I can't count the number of times I've walked past the fountain at the Hong Kong Peninsula! I assume you're talking about the one on Kowloon side. My boss always stayed at Stanford in Hong Kong, so that's where I stayed as well. I've been to the Peninsula in Manila a few times and they always treated me right.

I have found the Hilton Garden Inns to be quite nice. Clean, quiet, high speed internet connection, and even the hotel restaurants were pretty good. I also like the Doubletree as well as the Marriott. Keep in mind that these opinions are based on business travel.

I liked the Mirage, it was big pimpin' as you'd expect. Although really as with any of the monuments to gambling in Vegas, the actual hotel tends to be an almost minor part of the whole thing (when you consider many have a ginormous casino, a few fancy or interesting restaurants, indoor mall or shopping, outdoor water park, carnival rides, etc.)
