Oh, I'd also have to say Ludwig van Beethoven with Moonlight Sonata. Here's a hell of a page that gives you a good brief listen . You should recognize it right away if you don't know it by name. It has probably been in countless films.
If you like Warp stuff you should try Aphex Twin's Selected Ambient Works vol. 2. It contains some of the most evocative music I know. In fact, some of the tracks are so powerfull I can hardly listen to it.

Yep, that's one of my favorites. I would fall asleep to it if i had comfortable headphones.
big one of the moment is "suki suki pt 2" by sly and the family stone... maybe its because i like zoning out and imagining playing bass that well, or maybe i just like droping the tonearm and thinking "ah, its suki suki now"
and then there's jimmy smith and wes montgomery's stuff (big thanks to BenG for his album recomendations).
Anything by Arvo Part- especially Cantus in Memory of Benjamin Britten. Also Stravinsky's Duo Concertant (for violin and Piano)- the first movement: Dithryrambe. Another one is Samuel Barber's Adagio for String. And Schoenberg's Verklarte Nacht.
