First, I don't actually have an AMP now..

I see a lot amps have two outputs (left and right) for headphone. If my headphone only has one cable.

Which one i should plug in ? left or right ?

There aren't actually that many amps with two headphone outs - the Corda Opera is the only one I can think of off-hand. Are you sure that you're not mistaking an input for an output? Either that or they're RCA outs (are they one red, one white?) which you could then connect to another amplifier for speakers.

Balanced headphone amps would have a left/right. Amps like the RSA B52 and Apache or the Headamp GS-X. You need balanced headphones to listen to the balanced signal. These connectors are usually XLR as opposed to "normal" phone plugs.

Is that what you mean?

Not many amps have left and right sockets. You may be confusing the fact that some headphone amps have two (stereo) outputs to accommodate 2 separate headphones.

Most two input headphone amps I have seen just means it allows for two headphones (SE Single Ended) to be used at the same time BUT sometimes it can also be two different gain settings. Doesn't EAR amps do this? They use two inputs for different gain setting rather then a gain switch?

What type of output connectors are they (e..g., RCA, XLR, DIN) are they (or what do they look like)? If your amp has 2 RCA outputs for headphone use (which would be unusual) then you can buy a patch cord to adapt to your headphone. Which specific amps (maker, model) are you specifically talking about?
