I am thinking about designing an amplifier for my Grado's (well slightly modifying pre-existing amplifiers), and I was wondering if its possible to make an amplifier that would operate in balanced mode, and have another output for unbalanced headphones, that would not just use half of the amplifiers, but would use all four, if that makes any sense.

No won't work. The output of each amplifier is out of phase to the other on the same channel. Combining them would produce... zero! THe only way to unblance a signal would be to ignore one channel and reference to ground, or run them into a differential amplifier such any opamp mentioned on this forum which would combine them and put out a single ended signal, however then the opamp drives the grados not the balanced amp.
