Do DAC's support all file types?

If your computer can output the files through the software you're using, the DAC will process the audio.

The DAC don't care about which file type you play back.
At least if when we talk about audio CD data (16-bit/44.1KHz). 24-bit/92KHz files might be different, depending what the DAC support...

So I don't need to put much thought into it just as long as the player I'm using can play it?

Correct!
The DAC receive a digital audio signal, with a certain bit depth and sampling rate. It have no idea which file type (codec/container) the audio data are stored in.
