Bach is of course the top recommendation for organ music, but you may also want to check out romantic organ music for dazzle and special effects. A couple of Liszt CDs I own and recommend are

 
(great sound) and

(better selection, less expensive).

Slightly off the beaten track, but absolutely amazing, is the Symphonie Concertante by Joesph Jongen:  The final Toccata movement will knock your socks off.
 

 
Hindemith's Organ Concerto (and his Kammermusik No.7) is less quirky than his usual works, and shows how skillful he is with orchestral color.
