Attn: Spanish Head-Fiers (and everyone else, really...)

My girlfriend and I are taking a trip to Spain in June. Here is our current itinerary:

1. Fly into Madrid, head directly to Toledo by train
2. Spend 2 nights in Toledo
3. Early on the 3rd morning rent a car and drive to Granada.
4. Spend 2 nights in Granada
5. Early on the 5th morning take the train to Madrid
6. Spend 2 nights in Madrid
7. Fly home.

I'm looking for advice on things to do that I might not know about. I've been to all these cities Spain several times so I generally know about the major attractions, but I'd like to know if anyone has suggestions for things to do. Specifically I'd like to know about:

1. Restaurants. In Madrid we have been recommended El Botin. Can anyone recommend other tasty restaurants in any of these cities?

2. Things to see on the trip from Toledo->Granada. If I could show my girfriend some of Don Quixote's windmills, I think she'd really like that. Are there any nice towns to stop at for lunch? Anything that's a "must see" between these two cities?

3. Anything else of interest that we can/should see.

No, but I feel that Andalucia is a more "must see" part of the country. Barcelona is quite nice, as well, but for a first visit (for my GF) I feel the south part of the country captures the imagination better.

And if you like Opera (i like a lot) perhaps you could go to the Teatro Real.

Going to Granada you find Consuegra at 4 or 5 kms from N-4 highway (at Madridejos)http://madridejos.es/NET/Molinos/ . There are a lot of 'Molinos' (Windmills) and you can see them from the highway.
