Anybody Roast Garlic?

I had roasted garlic with Italian bread at a resturant it was awesome. My wife bought a terracotta garlic roaster. We roasted a head of garlic in olive oil and hate it with bread. Really good stuff. Any other versions of this recipe?

Roast your garlic in the oven, in a pan with some olive oil and chopped pumpkin. Roast until the pumpkin is beginning to blacken on the outsife. Take out of the oven, stir into cooked pasta with some pine nuts. This is a really good recipe.

You mean the orange pumpkin we carve at Halloween? No offense.

Yes, that's exactly what I mean. Don't knock it till you've tried it. Lots of pasta dishes, risottos, ravioli, etc, have pumpkin in them.

I love garlic, but haven't ever roasted my own. I'll have to give it a shot. And elipsis' recipe seems to involve a few things I would have never thought of combining... that means my roommate will want to try it, he loves weird combinations. For instance, sweet potatoes in a curry chicken stir-fry. That resulted, more or less, in a mild overall flavor as the major stuff cancelled out. Still, I like pumpkin, pasta, and garlic, so maybe I'll try it out.

ll I know is the house smells great after roasting garlic. Now my wife is making lasagna. No Italian in our roots. Smells great. We'll have to try some pumpkin next time. Less than four hours....

It's strange to see the differences between Australia and the US as far as cooking goes. By and large, you guys are far more conservative about what you cook with. Few Australians would raise an eyebrow over the suggestion of pumpkin in a pasta dish.

Oh, and if you do the pumpkin one, peel it before you chop it up. Don't want to be picking out that skin from between your teeth as you cook
