Did you try the failsafe (fallback ??) image ? (Hold the select button when booting, then go to settings, ....)   BTW, using itunes 9.2.1 doesn't seem to work anymore to restore to Apples firmware. It always sais it can't contact the ipod update servers. I had to install the latest version...
