It sounds like the issue may be more related to the quality of your initial MOG stream.  Are you sure it's streaming at 320 kbps and not defaulting to a lower bit rate?    The only other thing I can think of with respect to the sound quality issues you describe (with the setup you describe)...

I'd like to know as well.    FWIW, Kevin Halverson @ HRT emailed me a review of the LineStreamer+ from the March issue of HiFi & Musik, but it's in Swedish.  It appears that the magazine may have compared it to a Tascam product. 

iAmCalm:   According to Apple, you can still enable your WiFi while in Airplane Mode --   http://support.apple.com/kb/HT1355   You may need to change your default setting.  

Not sure if this is helpful to you or not, but I just recently started using I-Tunes' sharing mode to stream files from my desktop to an IPad2 docked on a Pure I-20 (then into NAD integrated amp).  It works great, although my Ipad2 is Wi-Fi only, so I can't help you on the interference issue...
