I've noticed this as well using my AirPods Pro with my 2018 MacBook Pro & iPhone 11 Pro. I'm not sure what's going on but the Mac sounds more muted and less detailed at all volume levels vs the iPhone. I'm surprised more people haven't been talking about this...

Sounds like your looking for a pair of Shure SE535's. They are very balanced and provide excellent highs, mids and bass but not too much bass.
