Well since neither JDS or Epiphany had anything to do with the design & are only the builders putting in the same parts, they should both sound the same, but for the build i'd go for JDS.

Shame our ear's can not be upgraded like we do with phones & amps, it could explain why some here differences others can not.

No not with that equipment, it takes really high end equipment to notice cable differences, even then it can be subtle.
